When you want a general builder rather than a specialist
A specialist is the right call when the job is one thing done well: a bathroom, a roof, an installation. A general builder is the right call when the job is several things that have to happen in order, and when the awkward part is the sequence rather than any single trade.
That is most renovation work on older property. Opening a wall, moving a bathroom and replacing a floor are three trades and one programme, and the programme is where projects go wrong.
It is also the answer for work that does not fit a category: a wall that needs rebuilding, a terrace that has moved, damp with no obvious source. Those start as an inspection rather than a quote, and a company used to mixed work is better placed to tell you which it is.

What is the difference between a builder and a renovation company?
In practice the labels overlap on Mallorca. What matters is whether the company has run projects of your size and whether it employs or subcontracts the trades your job needs. Ask both questions.
Can a general builder handle the whole renovation?
Many can, and that is what a turnkey arrangement is. Whether yours should depends on the scope, and on whether the work needs a technical team involved before anyone can price it.
Do I need separate quotes for each trade?
Not usually, and it is rarely a good idea. Splitting a job across trades moves the coordination onto you, and coordination is most of what goes wrong.
