On a working holding the house is frequently the smallest thing on it. Stores, animal buildings, walls, a well and a threshing floor are all part of the property, and a renovation that budgets only for the house has budgeted for a fraction of it.
Most of the property is not the house
Buy a holding out here and you buy a collection of buildings, most of which were built for a job that no longer happens. They are usually simple, usually stone, often in better structural condition than the house, and almost always ignored in the first round of planning because the house is where somebody intends to live.
That is a missed opportunity more often than it is a saving. An old store or animal building has straightforward structure, no layout worth preserving and no sentimental attachment, which makes it much easier to convert into something genuinely useful than the house is to reorganise. Guest accommodation, a workshop, an office or a summer kitchen all sit better in an outbuilding than carved out of a farmhouse plan.
The other half of the holding is what is not a building at all. Dry-stone walls, terraces, a well or cistern, the gate, the track and the boundary are all structures that need maintaining, and they deteriorate whether or not anybody is looking at them. It is worth having them surveyed at the same time as the house rather than discovering them later.

Is an outbuilding cheaper to convert than the house?
Frequently, because there is no existing layout to work around and the structure tends to be simple. What it needs instead is services brought to it, which is a known cost rather than an unknown one.
Do the old walls and terraces need attention?
They deteriorate slowly and continuously, and rebuilding a collapsed section costs far more than repointing one that is still standing. It is worth having them looked at with the buildings rather than separately.
Should everything be done at once?
Rarely necessary and usually worth planning as one scheme even if it is built in stages. Deciding what each building will eventually become stops the first phase making the second one awkward.
